McCormick & Schmick's Seafood Restaurants, Inc. has more than 50 affordable upscale casual dining restaurants that specialize in fish and other seafood dishes in 21 states and the District of Columbia. Half of these restaurants are located in buildings included in the National Register of Historic Places. Each restaurant's menu is printed daily and contains between 85 and 100 made-to-order dishes that incorporate local, regional, national, and international species of seafood and 30 to 40 varieties of fresh fish. The company operates primarily under the McCormick & Schmick brand. Its other names include M & S Grill, McCormick's Fish House & Bar, and Spenger's Fresh Fish Grotto.




Crab and Shrimp Louie Salad

McCormick and Schmick Recipe

Serves 8

1 lb crabmeat
1 lb bay shrimp
2-3 heads iceberg lettuce, shredded
24 tomato wedges
24 cucumber slices
24 hard boiled eggs, wedges
24 California black olives, large
parsley, garnish
8 lemon lemon, wedges
12-16 oz Thousand Island dressing

Start with a large oval platter and center the lettuce in an oblong shape leaving about and inch and a half boarder. Continue by alternating the tomato, cucumber, black olive and egg, placing them around the boarder evenly. Be sure to leave room to evenly distribute the lemon wedges around the platter. Next spoon the dressing over the lettuce, reserving a couple of spoonfuls for the top. Finally, crown your masterpiece with all of the crab and shrimp and put a large dollop of dressing in the center. Garnish your platter with a large bouquet of parsley at approximately four o’clock.
