BAKED COD with Shellfish Stew
McCormick and Schmicks Recipe
1/2 cup coarse bread crumbs (see notes)
2 tablespoons melted butter
4 filets of cod
2 cups chicken broth (see notes)
1 pinch saffron
1/2 pound clams
1/2 pound black mussels

Notes: After looking over the recipe above which was provided at the end of the video I noticed that a few ingredients are missing like
- What herbs are used in the bread crumb mixture? (Your choice of parsley, basil or oregano 1-2 tablespoons. Also may add Parmesan cheese. Think Italian garlic powder etc.)
- Where are the tomatoes for the saffron tomato broth? (I would skip the chicken stock and substitute 1 cup of clam juice and 1 cup of V-8 juice.)
I searched for the exact recipe but didn't have any luck so broke the down the components and took a look at similar dishes to give a recommendation for changes.
