Baked Cod with Shellfish Stew

The executive chef at McCormick and Schmick's Seafood Restaurants with show you an amazing  fish and seafood recipe which will dazzle your friends and family. It's called Baked Atlantic Cod with Herb Breadcrumbs, Clams, Mussels and Saffron Tomato Broth. Sounds fancy but it is very easy to make at home.

 BAKED COD with Shellfish Stew
McCormick and Schmicks Recipe

Serves 4

1/2 cup coarse bread crumbs (see notes)
2 tablespoons melted butter
4 filets of cod
2 cups chicken broth (see notes)
1 pinch saffron
1/2 pound clams
1/2 pound black mussels

For the directions watch the video cooking demonstration below.

Notes:  After looking over the recipe above which was provided at the end of the video I noticed that a few ingredients are missing like

  • What herbs are used in the bread crumb mixture? (Your choice of parsley, basil or oregano 1-2 tablespoons. Also may add Parmesan cheese.  Think Italian garlic powder etc.)
  • Where are the tomatoes for the saffron tomato broth? (I would skip the chicken stock and substitute 1 cup of  clam juice and 1 cup of V-8 juice.)
I searched for the exact recipe but didn't have any luck so broke the down the components and took a look at similar dishes to give a recommendation for changes.
